Ingredients

    ripe hass avocado
  • 3/4 c
    caster sugar or extra fine baker's sugar
  • 1-1/4 c
    low fat buttermilk
  • 1 large
    egg, lightly beaten
  • 1 tsp
    vanilla extract
  • 1-3/4 c
    all-purpose flour
  • 1/4 c
    unsweetened cocoa
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 1/2 tsp
    baking soda
  • 1 c
    shelled walnuts, chopped and divided

How to Make Chocolate Avocado Walnut Muffins

Step-by-Step

  1. Preheat oven to 375°F./190°C.
  2. Mash avocado with sugar in a mixing bowl (makes it easier to get the avocado smooth).
  3. Add all remaining ingredients except reserving 1/4 cup of the chopped walnuts.
  4. Place batter 2/3 full in cupcake paper lined muffin tin with at least 20 cavities.
  5. Sprinkle better with the reserved walnuts.
  6. Bake for 20-25 minutes or until a toothpick can be inserted and removed without wet batter.
  7. Cool on a wire rack.
