betty's lunchbox pizza bread/muffins

A sandwich alternative for lunchboxes. Loaded with pizza favourites this is always a hit with my 4 children and husband. My boys take two to school in lieu of 2 sandwiches. These are good for 2 days and can be frozen and popped into a lunch box frozen and will thaw by lunch time. I normally make a double or triple batch to last the week. Meat can be swapped for other meats such as pepperoni, broken up meatballs, bacon etc. Vegetarian option - forgo meats and add chopped pizza veggies (mushrooms, peppers, onions etc - they are best sauted first in my opinion) use 1 cup in total.

Ingredients For betty's lunchbox pizza bread/muffins

  • 1
    cup self raising flour or use 2 cups of self raising flour and forget the next 3 ingredients
  • 1
    cup wholemeal (whole wheat) flour
  • 1
    teaspoon baking powder
  • 1
    teaspoon bicarb soda
  • 1
    cups milk, at room temp. (minus a tablespoon for making bread)
  • 1
    egg, at room temp
  • 1
    teaspoon garlic
  • 1
    teaspoon dried onion flakes
  • 2
    teaspoons italian herbs (or 1 teaspoon basil and 1 teaspoon oregano)
  • 1/2
    cup bottled pasta sauce
  • 1/2
    cup chopped salami
  • 1/2
    cup chopped ham
  • 1/4
    cup, chopped olives
  • 1/2
    cup grated cheese
  • 2
    tablespoons dried parmesan cheese
  • 2
    tablespoons vegetable oil
  • 1/2
    teaspoon pepper
  • 2
    teaspoons oregano, extra for topping
  • 1/4
    cup grated cheese, extra for topping

How To Make betty's lunchbox pizza bread/muffins

    Pre-heat oven to 360oF (170oC) and line a 12 hole jumbo muffin tray. Set aside to be needed.

    Mix milk, egg, pasta sauce, garlic and oil until combined in a bowl or measuring jug.

    In a large bowl add everything else and make a well. Pour in the wet ingredients and mix/fold until JUST combined.

    Place spoonfuls of batter into the prepared liners and sprinkle tops with extra cheese and oregano.

    Bake in prepared oven for about 20 - 25 minutes.

    Can be baked into 2 loaves to make pizza bread.
