Our two year old grandson, Johnny, is such a joy to spend time with. My husband and I have so much fun watching him discover new things...like picking and eating blueberries for the first time. He likes to help me stir up good things to eat. So I'm happy when together we can enjoy really healthy foods like fresh blueberry muffins. Note: The coconut oil in this recipe imparts a really delicious taste.

Ingredients For best-ever blueberry muffins

  • 1 3/4 c
    unbleached white flour
  • 1/4 c
    sugar
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1
    egg, beaten
  • 1 c
    milk
  • 1/3 c
    coconut oil
  • 1 c
    fresh or frozen blueberries

How To Make best-ever blueberry muffins

    Sift dry ingredients into a bowl; make a well in the center.

    Combine egg, milk, and coconut oil. Add all at once to dry ingredients. Stir just until dry ingredients are moistened.
  • He's only two but he does a great job stirring muffins.

    Gently stir in 1 cup fresh or thawed and well-drained frozen blueberries.

    Filled greased muffin pans 2/3 full. Bake at 400 degrees for about 25 minutes. Note: To make cleanup easier you can line your muffin pans with paper bake cups.
