banana oatmeal muffins

I had so many over-ripe banans and wanted to do something differnt than bread. (made alot of that so far this season.) So I came up with this recipe using a basic muffin recipe. Turned out awesome, hope you enjoy!

Ingredients For banana oatmeal muffins

  • 2 c
    old fashioned oatmeal
  • 2 c
    over-ripe bananas (aporx 4)
  • 1 c
    milk
  • 2 lg
    eggs
  • 4 Tbsp
    unsweetened applesauce
  • 1 1/2 c
    sugar
  • 1 tsp
    vanilla
  • 2 c
    flour
  • 2 Tbsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/2 tsp
    ginger
  • 1/4 tsp
    nutmeg

How To Make banana oatmeal muffins

    Lightly oil bottom of muffin tin or use paper cups, which is what I do. Preheat oven to 350 degres.

    Stir together oatmael, bananas, milk, eggs, applesauce and vanilla. Set aside. Sift together (I just use a wire wisk) flour, Baking powder, baking soda, ginger, nutmeg and cinnamom stir into banana mixture just until well combined. Do not over mix.

    Pour into your muffin tins. Each cup should be aprox. 2/3rds full. Bake for 15 to 20 mins or until toothpick comes out clean. They will be a beautiful golden brown when done.
