Just made these this morning but instead of pecans, I put organic pumpkin seeds! So good!

Ingredients

  • 2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    nutmeg
  • 1/2
    salt
  • 1 stick
    unsalted butter
  • 3/4 c
    sugar
  • 2
    eggs
  • 3
    overripe bananas, mashed
  • 1/4 c
    sour cream
  • 1 tsp
    vanilla extract
  • 1 c
    pecans, chopped

How to Make Banana Nut Muffins

Step-by-Step

  1. Preheat oven to 375.
  2. Line muffin tin with paper liners.
  3. Stir in flour, baking powder, baking soda, nutmeg and salt together in a large bowl.
  4. In a seperate bowl, beat butter and sugar together until creamy.
  5. Beat in eggs, bananas, sour cream and vanilla and stir to mix well.
  6. Add flour mixture to the butter-sugar mixture and stir until flour is moist.
  7. Gently stir in pecans.
  8. Spoon batter into a muffin tin to just below top of liner.
  9. Bake muffins 20-25 minutes or until a toothpick comes out clean.
