Ingredients For banana buttermilk nutella muffins

  • 1 c
    all purpose flour
  • 1 c
    whole wheat flour
  • 1/2 c
    quick cooking rolled oats
  • 2 tsp
    baking poweder
  • 1 tsp
    baking soda
  • 4
    over ripe bananas mashed
  • 2 lg
    eggs
  • 1/2 c
    granulated sugar or splenda or a quarter cup of each which is what i did
  • 1/2 c
    unsweetened apple sauce
  • 1/2 c
    buttermilk
  • 1 tsp
    vanilla extract
  • 3/4 c
    nutella

How To Make banana buttermilk nutella muffins

    Preheat oven to 350F (180 C) Pray muffin pan with spray (I used wrappers and they really stuck so you might want to spray them if you use them.

    In a large bowl combine flour, oats, baking powder and baking soda

    In another bowl, wisk together bananas, eggs, sugar/splenda, applesauce, buttermilk and vanilla. Pour over dry ingredients and stir until just combined

    Spoon into prepared muffin pan. Bake for 20-25 minutes or until toothpick inserted in center comes out clean. Let cool for 10 minutes in pan then move to rack to cool completely

    spread each muffin with 1 tablespoon of Nutella. (For this step I just cut it open and scooped in a little nutella and then squeezed the sides back together.
