oat bran "gallettes"

I developed this recipe based on one from the Dukan Diet. It is a low-carb, high-protein treat with plenty of fiber! Feel free to play around with the seasonings. It can also be done savory, with herbs; I've used lemon or orange extract, too. One gallette has over 7 grams of fiber, and 10 grams of protein.

Ingredients For oat bran "gallettes"

  • 1/2 c
    egg whites (or 2 whole eggs)
  • 1/2 c
    plain nonfat greek yogurt
  • 1 tsp
    vanilla or almond extract
  • 2
    packets noncaloric sweetener (optional)
  • 1/2 c
    raw oat bran
  • 1/4 c
    raw wheat bran

How To Make oat bran "gallettes"

  • 1
    Heat a nonstick pan or griddle on medium heat; wipe with a few drops of oil to prevent sticking.

    Beat egg whites until foamy. Beat in yogurt, vanilla, and noncaloric sweetener (if using). Stir in oat bran and wheat bran and mix until it resembles pancake batter.

    Cook 1/4 of the batter at a time just like you would pancakes, about 2-3 minutes on each side. Enjoy one a day with your low-carb diet for a boost of fiber and protein. I keep these in the refrigerator, but they could also be frozen if you make a huge batch.
