How To Make italian herb & sun-dried tomato focaccia

  • 1
Dissolve 1 Tbsp of yeast in 1 1/2 cups of warm water. Oil a 9x13 baking pan liberally with olive oil.
  • 2
Combine all the ingredients except the Parmesan cheese and sun-dried tomatoes in a large bowl.
  • 3
Add the water and yeast mixture, mixing slowly.
  • 4
Beat with an electric mixer at high speed or a wooden spoon for 60 seconds. The batter will be sticky.
  • 5
Scoop batter into the prepared pan and spread evenly. Put a little olive oil on your hands to pat the dough into the pan easier.
  • 6
Cover with plastic wrap. Let rise at room temperature for 1 hour or until it becomes puffy.
  • 7
In the last 10-15 minutes that the dough is rising, preheat the oven to 375 degrees F.
  • 8
Gently poke the dough with your fingers, but do not poke through the dough. Just create small dimples.
  • 9
Drizzle the dough lightly with olive oil. Sprinkle with shredded Parmesan cheese, sun-dried tomatoes, and any additional dried herbs of your choice (if desired).
  • 10
Bake the bread until golden brown, about 35 - 40 minutes.
  • 11
Remove from the oven. Wait 5 minutes and take the focaccia out of the pan. Place it onto a wire rack. Slice and serve warm or at room temperature.
