I saw something very similar on a television program. Sounded yummy, so here is my version. This recipe lends itself to lots of variation in the fillings.

Ingredients For fruit & yogurt parfait rolls

  • 1 1/4 c
    all purpose flour
  • 1 Tbsp
    baking powder
  • 1 Tbsp
    granulated sugar
  • 1 1/2 tsp
    sea salt
  • 1 lg
    egg, beaten
  • 1 c
    milk
  • 2 Tbsp
    olive oil, extra virgin
  • 2 c
    yoplait thick & creamy vanilla yogurt
  • 1 c
    fresh blueberries or blackberries
  • 1 c
    fresh raspberies or strawberries, sliced
  • 1 c
    granola

How To Make fruit & yogurt parfait rolls

    Heat griddle to 325 degrees F.

    In a small bowl, mix all dry ingredients and blend well. In a seperate small bowl or measuring cup, add milk, oil and drop in egg. Beat lightly until well blended. Add egg mixture to dry ingredients and mix until just blended - mixture will be lumpy.

    Pour batter onto griddle using 1 cup measuring cup for uniform cakes. Flip once bubbles burst and edges become dry and slightly browned.

    Apply yogurt to one side of each pancake, sprinkle a few of both kinds of berries over yogurt, roll each filled pancake into a tube. Drop an additional tablespoon or two of yogurt and berries over each roll. Finish. With a sprinkle of granola.
