Fruit & Yogurt Parfait Rolls

1 1/4 call purpose flour
1 Tbspbaking powder
1 Tbspgranulated sugar
1 1/2 tspsea salt
1 largeegg, beaten
2 Tbspolive oil, extra virgin
2 cyoplait thick & creamy vanilla yogurt
1 cfresh blueberries or blackberries
1 cfresh raspberies or strawberries, sliced
How to Make Fruit & Yogurt Parfait Rolls
- Heat griddle to 325 degrees F.
- In a small bowl, mix all dry ingredients and blend well. In a seperate small bowl or measuring cup, add milk, oil and drop in egg. Beat lightly until well blended. Add egg mixture to dry ingredients and mix until just blended - mixture will be lumpy.
- Pour batter onto griddle using 1 cup measuring cup for uniform cakes. Flip once bubbles burst and edges become dry and slightly browned.
- Apply yogurt to one side of each pancake, sprinkle a few of both kinds of berries over yogurt, roll each filled pancake into a tube. Drop an additional tablespoon or two of yogurt and berries over each roll. Finish. With a sprinkle of granola.
