3 kiddos favorite "dessert" quesadillas

3 of our 4 grandkids live a 4-hour drive away. When we get together, the 2 oldest (ages 3 & 4) like to cook/bake with me, just as they do with their Mommy. Today we made a fun snack. They prepared, while I grilled for them. With this simple treat, the possibilities are endless to suit anyone's appetite/taste! This is what we "cooked" with the blueberries we had!

Your kids can prepare this simple, easy and tasty snack. They sort of remind us of pancakes. We liked the blueberries heated up - tasted like a hot blueberry jam. Cinnamon sugar sprinkled on top is delicious! A treat the whole family will enjoy.

Ingredients For 3 kiddos favorite "dessert" quesadillas

    package whole wheat Flatout "fold-it" bread
  • 1
    tub "mixed berry" spreadable cream cheese, 8 oz
  • 1 or 2
    cups fresh blueberries
  • 2 Tbsp
    cinnamon
  • 1/2 c
    granulated sugar

How To Make 3 kiddos favorite "dessert" quesadillas

  • Washing the blueberries.

    Wash blueberries; drain/dry/set aside. Any fresh berry or fresh fruit will work... you may have to slice/dice larger fruit; not too thick in order for even heating, without burning outside of quesadilla.
  • Spreading a layer of cream cheese on the bread.

    Spread layer of cream cheese over one entire side of the flatbread. Pita pockets, tortillas, etc. are great to use. Also, any spreadable cream cheese flavor [plain or otherwise] works!
  • Blueberries placed on half the bread.

    Place however many berries you want onto one half of the flatbread.
  • Folding the bread together.

    Then "fold-it" and slightly press down w/palm of hand [or wide spatula]. The girls really loved this whole part of the recipe!
  • Frying the dessert quesadillas in a pan.

    Add a little canola baking spray on the griddle [or pan that you use]. Grill on pre-heated/medium heated stove-top cast iron griddle [or whatever you use for making quesadillas/grilled cheese sandwiches] until cheese has melted around the berries/fruit or until outside is golden/a slight bit crisp.
  • Cinnamon and sugar combined in a bowl.

    After quesadillas have been grilled, place them on a platter and lightly sprinkle a small amount of cinnamon/sugar mixture over the top side .... or as w/my little gals, they wanted to dip into a very small amount on a plate of their own.
