Ingredients For potato scones

  • 1
    egg yolk
  • 1 pinch
    granulated sugar
  • 2/3 c
    whole wheat flour
  • 4 tsp
    baking powder
  • 1/3 c
    butter
  • 3/4 c
    mashed potatoes
  • 1/4 c
    white sugar
  • 1/8 tsp
    nutmeg
  • 1 tsp
    salt
  • 3/4 c
    milk
  • 1 2/3 c
    all purpose flour
  • 1
    egg white, lightly beaten
  • 1
    whole egg
  • 1/3 c
    raisins or candied mixed fruit

How To Make potato scones

    In a large bowl, combine flours, salt, baking powder, 1/4 cup sugar and nutmeg. Cut in butter until mixture is the consistency of cornmeal. Stir in raisins or fruit.

    In a medium bowl, combine potato, whole egg, yolk, and milk. Whisk until no lumps remain. Make a well in the center of the dry ingredients and add liquid all at once. Stir with a fork to make a soft, slightly sticky dough. If necessary add 1-2 Tbsp. more milk.

    Press lightly into a ball and knead gently on a floured surface about six times. Roll out dough to 1/2 inch thickness; cut into triangles. Place on an ungreased baking sheet and brush with slightly beaten egg white and sprinkle with a pinch of sugar.

    Bake in a preheated 450-degree oven for 13-15 minutes or until golden. Serve with butter or jam.
