creamy sweet coconut rolls (quick & delicious!)

These are wonderful, sweet, fluffy dinner rolls with a mild, sweet coconut sauce that slightly puddles underneath them when served. A nice change from plain, old dinner rolls. I like to serve them with baked ham topped with pineapple. The sweet/salty combination is incredible! I serve these in place of dinner rolls, not a dessert. I found this recipe a few years back on a bag of frozen dinner rolls. My husband's favorite!

Ingredients For creamy sweet coconut rolls (quick & delicious!)

  • 18 frozen yeast dinner rolls
  • 14 oz. can coconut cream or coconut milk (coconut cream preferred, if you can find it.)
  • 1/2 cup sugar

How To Make creamy sweet coconut rolls (quick & delicious!)

    Place frozen rolls in 3 rows of 6 in a sprayed 9x13 baking dish. Cover with sprayed plastic wrap and let thaw and rise until double in size.

    Combine coconut cream and sugar and mix well.

    Remove wrap from risen rolls and pour coconut cream mixture over the rolls coating each roll completely as you pour so they will have a consistent color as they bake.

    Bake at 350 degrees for 30-35 minutes until golden. My oven cooks hot, so your time may be less. Cover with foil if browning too quickly. Let cool a bit before serving. Coconut cream mixture will thicken as the rolls cool. Serve warm, not hot, on a small salad plate. Place roll on plate, then spoon sauce over the top, so that it puddles a little on the plate. These are served as an alternative to a dinner roll, not a dessert. Refrigerate any leftovers overnight and they are just as good the next day. Just heat in the micro. They stay nice and fluffy on top and yummy on the bottom.
