When Bubba and I lived in Huntsville, Texas we would frequent the Stagecoach Inn supper. Bubba loved their Hush Puppies and asked me to try and get their recipe. So I became friends with the manager and after having her over for countless weekend catfish fries. I hinted that Hush Puppies would be really good with the fish and how much Bubba loved the Inn's recipe for them. Long story short the next weekend she came with the recipe.

Ingredients For stagecoach inn's hush puppies

  • 2 c
    corn meal
  • 1 tsp
    baking powder
  • 3 Tbsp
    sugar
  • 1/4 c
    butter
  • 1 Tbsp
    salt
  • 1/2 c
    finely chopped jalapenos
  • 3 1/2 c
    water

How To Make stagecoach inn's hush puppies

    Combine meal, baking powder, sugar, and salt. Put water in a medium sized saucepan and bring to a boil.

    Add slowly to boiling water, stirring briskly.

    As soon as mixture is smooth remove from heat.

    Stir in butter and chopped jalapenos, cool.

    Form into finger shaped rolls.
  • 6
    Fry in 2-inches hot fat, 375 degrees, until golden brown. Drain on absorbent paper or paper grocery bags.
