After a trip to the Bahamas, my mom came home with a recipe for something call Johnny Cake which is completely unlike U.S. Johnny Cake (usually a version of cornbread). It is a great big baking powder biscuit traditionally cooked on the stove top in cast iron pan. It always takes us all back to Spanish Wells, Bahamas to make some. She misplaced her recipe some years ago but I found a very similar one online this week.

Ingredients For bahamian johnny cake

  • 3 c
    flour
  • 1 Tbsp
    baking powder
  • 1 tsp
    salt
  • 1/4 c
    white sugar
  • 1/2 c
    butter
  • 2/3 c
    milk

How To Make bahamian johnny cake

    Combine dry ingredients and cut in the butter until pea sized. Add milk to make a soft dough and knead until smooth. Let dough rest for about 10 minutes.

    You can use either of these cooking methods: Heat a cast iron skillet on very low to medium low heat on the stove top and grease well. Roll out the dough into a disk that neatly fits in the pan. Grill on each side about 10-15 minutes being careful not to burn it. Flipping it is a challenge. I used 2 spatulas in tandem. Check for doneness and cut into wedges and eat. This is how they do it in the Bahamas.

    OR place the dough in a greased 8 or 9 inch round or square pan. Pierce the top with a fork and bake at 350 for 20-25 minutes. Remove from oven and brush with milk, return to oven and bake for 5 minutes more. Then EAT IT.
