This scone has a soft center with a firm exterior, it's chock full of apples and flavor. The bourbon whipped cream is the icing on the cake, so to speak. My family loves this delicious scone for breakfast or as a sweet snack, creamy and delicious.

This scone recipe is a little different than others we've tried. They're not very sweet and almost like a biscuit. But, boy they were good. Apples and raisins add a slight sweetness to the scone. The scone itself has a subtle bourbon flavor that blends well with the fruit. The bourbon whipped cream is a delicious touch. But since it's not cooked, it does have a strong bourbon flavor. This could easily be cut back to suit your taste. These apple raisin scones are easy to make and would be a lovely afternoon snack with a cup of tea or a special breakfast treat.

Ingredients For apple raisin scones with bourbon whipped cream

  • FOR SCONE
  • 2 c
    all-purpose flour
  • 3 Tbsp
    brown sugar
  • 3 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 tsp
    salt
  • 1/4 c
    butter
  • 2 md
    apples, peeled, cored and diced
  • 1 tsp
    cinnamon
  • 1/2 c
    raisins
  • 1/2 c
    sour cream
  • 1 md
    egg, beaten
  • 1/4 c
    bourbon
  • EGG WASH
  • 1 md
    egg white with 1 tsp water for egg wash
  • 4 Tbsp
    coarse sugar for sprinkling on top
  • BOURBON WHIPPED CREAM
  • 1 c
    heavy cream
  • 1 Tbsp
    granulated sugar
  • 2 Tbsp
    bourbon

How To Make apple raisin scones with bourbon whipped cream

  • Flour, brown sugar, baking powder, baking soda, and salt in a bowl.

    In a large bowl stir together flour, brown sugar, baking powder, baking soda and salt.
  • Butter cut into flour.

    Using a pastry blender, cut in butter until mixture resembles coarse crumbs.
  • Diced apples tossed with cinnamon.

    In a medium bowl, toss diced apples with cinnamon.
  • Raisins and apples added to the bowl.

    Then add to the large bowl along with the raisins. Stir.
  • Sour cream, egg, and bourbon in a bowl.

    In a medium bowl combine sour cream, egg and bourbon.
  • Adding wet to dry ingredients.

    Make a well in the center of the flour mixture and add this all at once.
  • Ingredients combined.

    Stir until combined.
  • Dough formed into a circle.

    Turn out onto a lightly floured surface. Quickly knead by gently folding and pressing for about 10-12 strokes. Pat into about a 12 inch circle.
  • Rounds cut out of the dough.

    Using a 3-inch cookie cutter cut out about 8 circles.
  • Scones placed on parchment paper.

    Place the scones on a parchment-lined baking sheet.
  • Egg wash on the scones.

    With your fingers rub some egg wash on the top of each scone.
  • Sprinkling the scones with sugar.

    Sprinkle with the coarse sugar.
  • Scones baking in the oven.

    Bake at 375 for 15 minutes until edges begin to brown.
  • Preparing the bourbon whipped cream.

    While cooling whip the cream and sugar with a hand mixer. When whipped, fold in the bourbon.
  • A bite taken out of the apple scone with bourbon whipped cream on the side.

    Serve prepared cream with the scones.
