This was my mom's recipe. She is now passed but has given me the knowledge of cooking, baking, and preparing meals for large amounts of family. I was the only girl growing up with 5 brothers. My mother and I were always in the kitchen cooking for my dad and five brothers. I guess I was her sous chef. This recipe was always a hit at functions. I hope you enjoy!

When zucchini is plentiful, we're always looking for different ways to cook with it. These zucchini fingers are a great way to use it. This savory dish makes a moist bread with almost an egg quality. Garlic and onion add a lot of flavor. When cut into slices, they're easy to pick up and snack on during the day. If browned sausage or ground beef was added to these, they could be eaten as a meal. Ingredients

  • 3 c
    grated zucchini (washed and skin on)
  • 1 small
    or 1/2 large onion, grated
  • 1 clove
    garlic, minced
  • 2 c
    Bisquick or cake flour
  • 1/2 c
    vegetable oil
  • 1/4 c
    grated Parmesan cheese
  • 1/4 tsp
    salt and pepper
  • 2 Tbsp
    dried parsley
  • 4
    eggs, mixed separately

How to Make Zucchini Fingers

Step-by-Step

  1. Mix the following together in a large mixing bowl - grated zucchini, grated onion, minced garlic, 1/2 cup vegetable oil, salt, pepper, parsley, and grated cheese.
  2. Mix 4 eggs in a separate bowl. Add eggs and mix together with the above ingredients.
  3. Finally, add 2 cups of Bisquick. Mix until well blended.
  4. Pour into a well-greased 9x13 baking dish. (I pour about 2 Tbsp of vegetable oil on the bottom of the pan.)
  5. Bake in a 350 oven for 35 to 45 mins until the top is browned.
  6. Cool 15 minutes before cutting. Enjoy!
