Do you ever wish veggies could taste like pizza?!? These crisps do. The zucchini has a mild flavor; a perfect vehicle for the cheesy tomato goodness! These crispy bites will have you enjoying your veggies like never before. Great for snacks, game day, a nice side or just to get the kids to eat veggies. Keep jarred sauce and other ingredients on hand and you are on your way to crispy, pizza goodness! This recipe was adapted from 12tomatoes.com and as their photo is better than mine, I have also used their photo. Credit to 12tomatoes.com.

Ingredients For zucchini crisps pizza bites

  • 3 md
    zucchinis, rinsed and cut into thin rounds
  • 2/3 c
    panko or seasoned bread crumbs
  • 2/3 c
    parmesan cheese, grated
  • 1/2 c
    mozzarella cheese, grated
  • 1/3 c
    marinara or pizza sauce
  • 2-3 Tbsp
    olive oil, extra virgin
  • 1-2 pinch
    kosher salt and ground pepper, to taste

How To Make zucchini crisps pizza bites

    Preheat oven to 450 and lightly grease a rimmed baking sheet with non stick spray.

    Place zucchini rounds in a large bowl and drizzle with olive oil. Toss well so that rounds are well coated.

    In shallow dish or small bowl, mix Panko and parmesan cheese together until combined and then season with salt and pepper.

    In batches, press both sides of zucchini rounds into Panko mixture. Press firmly so it adheres, until all rounds are thoroughly coated.

    Transfer zucchini to prepared baking sheet and bake for 20-25 minutes, or until breading is golden brown.

    Remove tray from oven and spread a small amount of marinara/pasta sauce over each round.

    Sprinkle mozzarella over the top and return to oven. bake another 5 minutes, or until cheese is melted.

    Remove from oven and serve hot.
