Blue Ribbon Recipe

This would be a great appetizer at your next party or just to snack on while watching the big game! Instead of tortilla chips, fried potatoes are the basis for these nachos. They're topped with cheese, bacon, corned beef, salsa, jalapenos, sour cream, and more. Does it get any better than that?! You don't have to be Irish to enjoy these nachos.

Ingredients For irish nachos

  • 5
    potatoes, sliced thick with skin on
  • 1 1/2 Tbsp
    seasoned salt
  • 5 slice
    bacon
  • 1 c
    cheddar cheese, shredded
  • 4
    pickled jalapenos (jarred), sliced
  • 1/4
    sweet onion, chopped
  • 3/4 c
    corned beef, cooked and chopped
  • vegetable oil, for frying
  • TOPPINGS (OPTIONAL)
  • sour cream
  • green onions, sliced
  • tomatoes, chopped
  • salsa
  • additional jalapenos

It doesn't say how to prepare the corned beef. You can buy prepared corned beef from the deli, prepare it in a pressure cooker then chop, or use your leftover corned beef from St. Patrick's Day.
  • Frying potato slices.

    Fry potato slices in vegetable oil until golden & tender; drain paper toweling and sprinkle with seasoned salt.
  • Sauteeing onions in bacon grease.

    Cook bacon until crispy, then remove and set aside; Add onion to bacon drippings and cook until transparent and tender.
  • Layering fried potatoes in a cast iron skillet.

    Layer potatoes on the bottom of an 8" or 10” cast iron skillet.
  • Shredded corned beef on top of potatoes.

    Add corned beef.
  • Crumbled bacon and onions over potatoes.

    Add crumbled bacon and onion.
  • Sprinkling cheese over the potatoes.

    Top with shredded cheddar cheese.
  • Sliced jalapenos on top of the cheese.

  • Nachos under a broiler.

    Place under broiler for 10–15 minutes or until hot and delicious. Finish with your choice of toppings and enjoy!
