I had this really nice French Bread and a small log of high quality Goad Cheese. So I made a Bacon Goat Cheese Crostini...It was good, But The Bacon overshadowed the Goat Cheese a little bit...So...Looking back, This is the recipe I SHOULD'VE DONE lol. But, we live and we learn. So heres the Recipe I wish I would've done. I hope you enjoy! :)

Ingredients For balsamic goat cheese bruschetta

  • 12 slice
    medium sized crusty italian bread
  • 1/2 c
    balasmic vinegar
  • 1/2 c
    diced tomatoes
  • 1 c
    goat cheese (brought to room temp)
  • Drizzle
    olive oil
  • 1/4 tsp
    dried italian herbs or herbes de provence

How To Make balsamic goat cheese bruschetta

    Dice the Tomatoes...You need 1 cup of Diced tomatoes. Not 1 Cup of Tomatoes Diced...But I didn't have to tell you that ;)

    In a small sauce pan, Add the 1/2 cup of Vinegar, and reduce on medium heat, by half. Once Reduced, set aside to cool/

    Mix the Herbs with the Balsamic, then add the tomatoes, stir and set aside.

    Drizzle the bread with Olive Oil on both sides. Then, In a Grille Pan or open flame grill, Grill the bread until slightly charred and crusty
