Ingredients For artichoke loaf

2artichoke hearts (small jars)

4eggs

1onion (small)

1garlic clove

1/4 tsporegano, dried

1 1/2-2 ccheddar cheese, shredded

3/4 cbread crumbs
How To Make artichoke loaf

1Preheat oven to 350. Finely chop onion and garlic; set aside. Drain artichoke hearts, reserving liquid in frying pan. Add onion and garlic; saute until soft and translucent. Set aside to cool.

2In a mixing bowl, add chopped artichoke hearts and eggs; mix thoroughly. Toss in onions and garlic. When cool, mix in oregano, cheese and bread crumbs. Pour into an 8x8 or 9x9 square baking dish, spreading evenly, for 30-45 minutes.
