A "chaat corner" in India means any/all of the following: - a go-to place - lunch/evening snack spot - fast-food place - never a proper restaurant - each city will have at least 2 of these - are not/never been till now a national chain Here is my version of the chaat corner's Aloo Tikki recipe

Ingredients For aloo tikki (the close cousin of potato samosa)

  • 1 lg
    red potato (can use any variety)
  • 1/4 c
    green peas
  • 1 tsp
    garam masala
  • 1 tsp
    dried methi leaves (can be substituted with very finely crushed bayleaf)
  • 1/2 Tbsp
    butter, melted and golden brown
  • pinch
    turmeric powder
  • 2
    cashews, broken in halves
  • 1/8 c
    corn meal
  • salt to taste
  • 1-2 tsp
    vegetable oil for shallow frying
  • pinch
    sambar powder (store-bought)
  • ALL THESE INGREDIENTS CAN BE FOUND AT YOUR LOCAL INDIAN STORES

How To Make aloo tikki (the close cousin of potato samosa)

    Boil the potato and peas together. Drain off all the liquid and mash them together, make sure the mixture is little dry.

    Now add all the other ingredients EXCEPT oil and corn meal and make a nice potato dough. Use fresh clean hands to make the dough.

    Microwave the mixture in a microwave safe bowl for about 1 min to let all the ingredients cook before frying them. This ensures maximum taste and aroma.

    Remove the bowl from the microwave and let it sit for about 1/2 min. Now with a 1/8 measuring cup, measure 5 small portions of the dough. Flatten and make 5 medium potato patties out of the portions.

    Heat a saucepan/cast iron skillet, over medium flame. Hold your palm on top of the pan to see if it has heated enough.

    Dip and coat the patties in corn meal and arrange them on the pan. Add a drop of oil on each of the 5 patties. Now flip the patties and add a drop of oil each on each patty. Just flip the patties every 3 mins, until both sides have been fried well to a shade of golden-brown.

    Once the patties have cooked well, serve immediately and hot with ketchup or mint chutney.
