I created this recipe on the fly one night, when time was of the essence. Dinner had to be on the table in about 20 minutes. Amazing how that works out for the better sometimes! This is a simple and tasty side dish that doesn't disappoint. Feel free to create your own endless variations with this basic and delicious recipe. We think it is a keeper! Enjoy!

Ingredients For bonnie's simple side of rice

    cup minute rice
  • 1
    cup chicken broth
  • 1
    cup frozen peas and carrots thawed in warm water
  • 1
    small can mushrooms, stems and pieces, drained
  • 2
    tablespoons butter
  • 1/2
    teaspoon garlic powder
  • 1/4
    teaspoon ginger powder
  • 1
    tablespoon parsley
  • 1/2
    teaspoon black pepper
  • salt to taste after cooking

How To Make bonnie's simple side of rice

    Place a small sauce pan that has a tight fitting lid over medium heat. Add the butter, chicken broth, mushrooms, garlic, ginger, parsley, and black pepper, and bring to a boil. Add in the minute rice and the peas and carrots. Stir gently to combine, put the lid on, remove from fire, and let it sit about 7 or 8 minutes.

    COOK'S NOTE: If you prefer to use regular cooked rice, follow the package directions, and add the seasonings and butter to the broth, then add the veggies 8 minutes before the rice is cooked. This is a good side dish for an excellent quick lunch or dinner with some sliced cooked chicken, fish or shrimp. For beef, use beef broth when you make the rice.

    VARIATIONS: To make a rice bowl: If you purchase cooked, ready to eat shrimp, frozen in the bag, take out enough for a meal, and then pour water over it to thaw the shrimp, and drain, then add to the rice when you add the peas carrots. To make a delicious rice salad: Serve the rice hot in a bowl, add 1 cup of Romaine lettuce, chopped, one medium tomato chopped, and 1 tablespoon of red onion, chopped fine. (Cooked shrimp or sliced cooked chicken is optional) Drizzle all with olive oil and red wine vinegar, salt and pepper. Toss and eat. Create new and endless variations! Enjoy!
