I took this to our monthly ladies luncheon and it was a hit with the ladies AND the kids. VERY little mayonnaise (I don't care for mayo much so I always like recipes that have little or none but still tastes great). It was awesome for a hot summer "don't use the oven" day.

Blue Ribbon Recipe

Oh what a good combination - lime juice, cumin, and cilantro are so good together. This salad would be wonderful on a hot summer day or, in our opinion, any day! A great recipe if you're hosting a girls lunch or looking for a light dinner. The Test Kitchen
