I had fun tweaking this recipe for an Autumn Tea my club had. I love crab and so it made sense I would make something from crab to share with my friends.

Blue Ribbon Recipe

The perfect crab appetizer! These are basically a crab cake in popper form. No one needs to know how quick and easy these are. With a bit of heat, the red pepper adds a punch of flavor. The lemon sauce brushed on top is a great touch.

Ingredients For baked crab popper delights

  • cooking spray
  • 1 c
    unseasoned Panko bread crumbs, divided
  • 3 sm
    mini red bell pepper
  • 3
    green onion stems
  • 1 c
    corn, canned
  • 16 oz
    jumbo lump crabmeat, drained
  • 3/4 c
    Duke's mayonnaise
  • 1
    egg, lightly beaten
  • 1 tsp
    coarsely ground black pepper
  • 1/2 tsp
    salt
  • 1
    lemon, juiced
  • 1/8 tsp
    cayenne pepper

How To Make baked crab popper delights

  • Mini muffin tin coated in Panko crumbs.

    Heat oven to 425 degrees F. Spray the cups of a mini-muffin pan with cooking spray. Sprinkle cups with 1/2 cup of the bread crumbs, gently tapping and rotating to coat.
  • Red bell pepper and green onions chopped.

    Finely chop bell pepper. Blot peppers dry with a paper towel. Finely chop onion tops, setting aside 1 teaspoon for garnish.
  • Corn, bell pepper, remaining green onions, crabmeat, mayonnaise, egg, black pepper, salt, and crabmeat combined in a bowl.

    Combine the corn, bell pepper, green onions, crabmeat, 1/2 of the mayonnaise, egg, black pepper, and salt. Mix well, but gently so as to not break up the crabmeat too much. Sprinkle lightly with remaining Panko crumbs.
  • Crab poppers baking in the oven.

    Divide mixture evenly among the cups. Bake 10 minutes or until golden brown. Remove pan from the oven. Cool in the pan 2 minutes and then transfer from pan to a cooling rack.
  • Brushing with a lemon mayonnaise mixture.

    Meanwhile, combine lemon juice, cayenne pepper, and remaining mayonnaise in a small bowl, mixing well. Brush tops of crab cakes with the sauce.
  • Green onions sprinkled on the Baked Crab Poppers.

    Top with reserved finely chopped green onion tops.
