A friend of mine brought these to a party. I fell in love with not only the taste, but with how easy and relatively inexpensive they are to make, not to mention at just how quick they are to assemble! I've made these using leftover chicken breasts as well as already made store bought chicken salad. Small phyllo cups come 12 to a box for about 2 dollars. I've used slivered almonds on top and also chives. These are also cute for when the gals get together for "girl time", or a little girls "Birthday Tea Party". So versatile and fun!

Ingredients For chicken cups

  • 1 pkg. phyllo cups (whatever size you want)
  • two cups chicken salad. prepared yourself, or store bought.
  • slivered almonds

How To Make chicken cups

    Thaw pkg. of phyllo cups while still in pkg. About ten minutes. Once thawed, transfer to serving platter.

    Place approx. two Tablespoons of your home-made or store bought chicken salad into each cup. Top each cup of chicken salad with two or three slivered almonds.

    Keep platter covered with plastic wrap and in the fridge until ready to serve. While you can make or buy the chicken salad a day ahead, you don't want to assemble the cups until just before serving so the cups don't get soggy.
