Baked Buffelo Chicken Bites with Fat Free Feta Dip

Fun Fact: Boneless Chicken Wings aren't really wings at all. They are simply cut up chicken breast meat with sauce.

  •   1 1/2 lb
    boneless skinless chicken breast, cut up
  •   4
    egg whites, beaten
  •   1 c
    whole wheat white flour
  •   2 Tbsp
    peanut oil
    0% fat commercial wing sauce
  •   6 oz
    feta cheese, crumbled or fat free blue cheese if you can find it
  •   1/4 c
    fat free half & half
  •   1/2 c
    fat free sour cream
  •   1/2 c
    fat free or low fat mayonnaise
  •   2 Tbsp
    rice wine vinegar
  •   2 clove
    garlic, minced
    pepper to taste

How To Make

    Pulse all ingredients for feta sauce in food processor until well combined. Refrigerate in an airtight container until ready to use.

    Preheat oven to 375.

    Grease a baking pan with 2 Tbsp. Canola oil.

    Roll chicken in flour and dip in egg white then roll in flour again. Place in pan.

    Spray tops with butter flavored cooking spray

    Bake for 20 minutes.

    Heat wing sauce on stove in a small sauce pan. Dip each piece of chicken in warm wing sauce.

    Serve with celery sticks and low fat feta sauce.
