Mexican Shrimp Cocktail

I love shrimp cocktail, but when I had this in a Mexican restaurant one day I went over the moon for it, thus started my quest for how to make it. Finally I came up with this recipe. I like making my own salsa but using store bought works just as well, and its somewhat faster.

Ingredients

  • 1 lb
    cooked shrimp
  • 16 oz
    salsa, mild
  • 1/2 c
    chopped cucumber
  • 1/2 c
    chopped celery
  • 1/2 c
    ketchup
  • 1/4 c
    cilantro, fresh chopped
  • 2 Tbsp
    lemon juice
  • 1/4 tsp
    garlic minced
  • 1 large
    avacado
  • 1 can(s)
    tomatoe juice
  • 2 dash(es)
    hot sauce

How to Make Mexican Shrimp Cocktail

Step-by-Step

  1. Make sure shrimp is peeled and deveined. place in frig, till ready to use.
  2. In a large bowl, mix together all ingredients, saving shrimp and avocado for last. Mix together.
  3. stir in shrimp whole or chopped saving some for garnish.
  4. add in avocado.
  5. Cover and chill.
