bea's individual mini pizzas

Kids, as well as adults, love these simple but tasty snacks. This is a great after school snack. When my son (then my granddaughter) was small, I would keep a batch of the topping made up in the fridge, along with an extra loaf of party bread. This way I could give them a nice snack to tie them over until dinnertime. I would also serve this when they had playmates over. Oh, I was the coolest mom (then Nana) ever!!!

Ingredients For bea's individual mini pizzas

  • 1 lb
    hot pork sausage, cooked & crumbled
  • 6 slice
    bacon, cooked & crumbled
  • 8 oz
    pizza blend shredded cheese
  • 1 tsp
    oregano, dried ( i use more )
  • 3/4 c
    mayonnaise (may take 1 cup-use judgement)
  • 1
    loaf party rye bread

How To Make bea's individual mini pizzas

    Mix first 5 ingredients until well blended. Spread mixture, probably a tablespoonfull, onto slices of party bread. Bake @ 350-375 until cheese has melted. Serve warm...be careful not to overbake. Note: topping can be stored in fridge (up to 4 days) until ready to cook. You can use any party bread you desire. I'm sure it would be good on french bread or bagles, too.

    Note: Sometimes I add slices of pepperoni on top as well. I also add parsley or green onions to the mixture. This, of course, is optional.
