This was one of the appetizer items I served for Easter Dinner. I added the Avocado, to add extra fiber to the dish. Added the lemon juice to prevent the avocado from turning brown. These turned out very good, the horseradish gave them the extra kick they needed in the flavor category, and we loved them. My husband had 4 before dinner was ready. I made my entire dinner as carb friendly, and because of the fiber in the avocados, this appetizer only had 1 net carb per half egg serving.The food processor works wonders for this appetizer. Add everything to the processor for a creamy texture.

Ingredients For green eyed lady deviled eggs

  • 12 lg
    hard boiled eggs, peeled & halved, yolks removed
  • 2 Tbsp
    horseradish, refrigerated section
  • 2 md
    haas avocados, halved & seed removed
  • 2 Tbsp
    lemon juice
  • 1 md
    shallot, chopped fine
  • 3/4 c
    duke's mayonnaise, or any good quality brand
  • 1/3 c
    grated parmesan cheese
  • 3 Tbsp
    dijon mustard
  • 2 tsp
    granulated garlic
  • 1 tsp
    black pepper
  • 1
    packet splenda or other zero calorie sweetener, optional
  • 2 Tbsp
    green & red pepper chips to use for eyes & nose (optional)

How To Make green eyed lady deviled eggs

    Cut Avocados in half, & remove the seed, add the halves to a medium size bowl.

    These are most of the main ingredients. This was the first time I tried Dukes Mayonnaise, and I LOVE it, it has recently become available in our area

    Boil eggs to hard boiled stage, then place in cold water to chill, then peel when cool enough to handle. Cut eggs in half, and add the yolks to bowl with the avocado halfs. Keep the whites separately.

    Add all ingredients to bowl, mayonnaise, lemon juice cheese and all of the other ingredients with the avocados, then add to a food processor or blender, or mash by hand.

    Process until Mixture is smooth and creamy.

    Place the whites on a large plate or platter, or deviled egg tray.

    Fill each half evenly with deviled egg mixture, may need to repeat several times to use all the mixture into each cavity of the egg white half.

    Now top each half with 2 green bell pepper chips, or use Jalapeno chips for the eyes and one red for the nose. OPTIONAL
