pastrami egg rolls
Use as an appetizer or for a meal. The "Pastrami" is great sliced thick from the Deli. You could substitute with other deli meats. (Corn Beef is also good for a St. Patrick's Day party.) Recipe: FOOD52 - This is my modified version.

Ingredients For pastrami egg rolls

10egg roll wrappers

1 cpastrami, thick slices cut from deli - chop slices into small pieces/squares. optional: cooked corn beef, diced

1/2 ccooked cabbage, diced (cook in microwave until done)

1/2 ccooked carrots, diced (i used matchstick carrots & cooked in microwave for about 40 seconds)

1/2 csauerkraut, diced (i used boar's head brand in pkg-drained liquid)

3-4 sliceswiss cheese, diced (or 1/8 pound)

1 tspcaraway seeds, crushed

1/2 tsphorseradish (i used seminole brand, gourmet-prepared, in a jar)

1/2 tspdijon mustard

vegetable oil

olive oil (brush lightly on tops before baking)
How To Make pastrami egg rolls

1Mix the pastrami (or corn beef), cabbage, carrot, kraut, cheese, and caraway together. Season.

2Fill the egg roll wrappers - I used about two big spoonfuls each - and roll up into egg rolls-over the top, in the sides, then wet the tops and roll up completely. (NOTE: The Egg Roll Wrappers also have directions & photos on the package on how to roll.)

3Fry them up in some hot oil, turning them until all sides are golden brown. (NOTE: I baked them in the oven at 400 degrees for about 10-15 minutes, or until lightly browned. Be sure to lightly coat a baking sheet with non-stick cooking spray. Place egg rolls seam side down onto cooking sheet. Brush tops of egg rolls lightly with olive oil.)

4Mix the horseradish and mustard together to serve. (OPTIONAL: I also serve with a small jar of Plum Sauce on the side.)

5I double this recipe for a larger crowd at potlucks or holiday parties & use up all the egg roll wrappers in the package.
