I received a jar of these as a gift along with the simple recipe for them. They are easy to make and so good! A very nice gift for Christmas or otherwise.

Ingredients For vanilla apricots

3 csugar

1 1/2 cwater

3strips lemon zest

1split vanilla bean

3 cdried apricots
How To Make vanilla apricots

1Bring sugar, water, lemon zest, and vanilla bean to a simmer, stirring frequently. Add apricots and continue stirring frequently for 10 minutes.

2Let mixture cool and then divide amoung 6 small jars. Put on lids and refrigerate after thoroughly cool.

3If giving as a gift label as "Vanilla Apricots, Refrigerate".
