Jim's Shrimp Scampi
Either way, you will love this & increase the recipe amount for a party!
1 boxspaghetti cooked al'dente
1 cwhite wine or chicken broth
1 mediumlemon - juiced
2 Tbspminced, fresh garlic (use more or less to your taste)
1 lbmedium shrimp, peeled & deveined
8 Tbsp(1 stick) unsalted butter, cut into chunks
1/4 cchopped, fresh parsley (keep 2 tbs aside for garnish)
·salt & pepper to taste
How to Make Jim's Shrimp Scampi
- Heat a skillet and add the wine & garlic. Let the wine reduce by half. The garlic should be soft.
- When the wine is reduced, add the shrimp and lemon juice. Stir until they are almost pink all the way through. Lower the heat.
- Start whisking in the butter a piece at a time until it is all incorporated and the sauce has emulsified. Season with salt & pepper. Stir in parsley (remember to keep 2 Tbs. aside for garnish.)
- Pour mixture over cooked pasta and mix together using tongs. Garnish with parsley. Place lemon wedges on the side.
