This is not your ordinary shrimp cocktail. Made with salsa, avocados and a touch of lime, it is deliciously different. It's a quick and easy appetizer or lunch entree and is sure to please!

Ingredients For cabo shrimp cocktail

1/2 mdavocado

1/2 Tbsplime juice
-
1/2 to 2/3 cpicante sauce or salsa, chunky (your favorite)

10 mdor 7 large shrimp, cooked peeled & deveined
How To Make cabo shrimp cocktail

1Choose your serving bowls, wine or Margarita glasses or goblets.

2Dice avocado; sprinkle with lime juice.

3Pour salsa into bowl or glass that will be used to serve.

4Top with diced avocado (sometimes I reserve 1 slice for garnish, as pictured.)

5Arrange shrimp to hang over rim of bowl or glass. (Note: May be served with shrimp, cut into bite-size pieces, mixed into the salsa, also. Makes eating it less "messy.")

6Serve immediately or cover and refrigerate until served (do not make ahead more than an hour or two.)
