Don't let those kumquats go to waste! This is wonderful served with roasted meats (think duck), warmed over ice cream or pound cake, or my favorite method: On a spoon, straight from the jar.

Ingredients For candied kumquats

  • 8 c
    halved, seeded kumquats
  • 4 c
    sugar
  • 1 1/3 c
    water ( from boiled kumquats)
  • 2 tsp
    rose water

How To Make candied kumquats

    Place halved, seeded kumquats in large pot, cover with water, and boil for 10 minutes or until skin, when pierced, is tender.

    Remove kumquats from water and drain in colander, reserve water.

    In a LARGE pot with high sides ( this stuff will bubble and foam up high!), combine sugar, 1 1/3 cup of kumquat water, and rose water. Bring to a boil, until temperature reaches 225 degrees on candy thermometer.

    Add kumquats, bring to boil again, and cook on high for 10 minutes. Remove from heat, and fill prepared jars with kumquats and syrup. Process in boiling water bath for 15 minutes. Remove from heat and cool without disturbing jars.
