A favorite dish of Jimmy Carter's. This quickly became one of my favorites. Very good. Too good not to share. Hope you enjoy!!

Ingredients For rosalynn carter's plains georgia cheese ring

1 lb. sharp cheddar cheese, finely grated

1 cup mayonnaise

1 cup chopped pecans

1/2 cup finely chopped onion

6 turns freshly ground black pepper

dash of cayenne pepper

12 ounce jar strawberry preserves
How To Make rosalynn carter's plains georgia cheese ring

1Combine cheese with mayonnaise, chopped nuts and onion. Mix in black pepper and cayenne, and blend thoroughly.

2Press into 3-cup ring mold. Refrigerate for at least 2 hours.

3To serve, dip mold into a pan of hot water for 15-20 seconds before turning out on to a serving platter.

4Fill center with strawberry preserves and serve at once with Ritz crackers.
