Yum! These mac and cheese bites are melty, crispy, and delicious. The mix of Monterey Jack and cheddar cheeses makes these bites nice and cheesy. We recommend adding the Dijon mustard, it gives a slight tang to the bites. Smoky bacon is the perfect topping. By coating the tins with bread crumbs, they really do come out easily but it also adds a slight crunch to the mac and cheese. These will make a fun party appetizer, but would also be yummy at a luncheon, game night, or as a snack for toddlers.

Ingredients For easy macaroni and cheese bites

  • 1/4 c
    Panko bread crumbs, seasoned or plain
  • 2 c
    uncooked elbow macaroni
  • 1 Tbsp
    unsalted butter
  • 1
    egg, beaten
  • 4
    strips bacon, cooked crisp and crumbled
  • 1 tsp
    Dijon mustard, optional
  • 1 c
    whole milk
  • 1/2 tsp
  • 1 c
    shredded sharp cheddar cheese
  • 2 c
    shredded Monterey Jack cheese, divided
  • 1 tsp
    finely chopped parsley, or 1/2 tsp dry

How To Make easy macaroni and cheese bites

  • Mini muffin pans greased.
    Preheat oven to 350 degrees F. Grease a mini muffin tin generously with butter or non-stick spray.
  • Bread crumbs coating the tins.
    Coat the insides of the mini-muffin tin with bread crumbs (this help the bites hold their shape).
  • Cooking the macaroni.
    Bring a large pot of lightly salted water to a boil and add the macaroni. Cook 4-5 minutes, until just softened but not cooked through. Remove from the heat, drain and return the macaroni to the pot.
  • Butter and egg stirred into the pasta.
    Stir in the butter and egg until pasta is evenly coated.
  • Bacon, mustard, milk, salt, and cheeses being mixed in.
    Mix in the bacon, mustard, milk, salt, cheddar, and 1 cup Monterey Jack cheese.
  • Spooned into muffin tins and topped with cheese.
    Spoon the mixture into the muffin tin, press the filling gently with your fingers (to help the bites hold their shape), and top with the reserved cheese.
  • Mac and cheese bites baking in the oven.
    Bake 15-20 minutes or until the top is golden brown.
  • Mac and cheese bites cooling.
    Allow to cool slightly before removing from pan. Garnish with parsley and enjoy.
