  • 1 c
    oil
  • 3
    large eggs
  • 2 c
    raw, grated zucchini
  • 2 c
    sugar
  • 3 tsp
    vanilla
  • 3.25 c
    flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 3 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 can(s)
    chopped pecans

How to Make Zucchini Bread

Step-by-Step

  1. Grease and flour 2 loaf pans.
  2. In a large bowl, mix oil, eggs, zucchini, sugar and vanilla.
  3. In another bowl, mix together flour, salt, baking soda, cinnamon and nutmeg.
  4. Add flour mixture to zucchini mixture.
  5. Add nuts.
  6. Stir to combine mixtures.
  7. Pour into prepared pans.
  8. Bake at 350 for 45 minutes to 1 hour.
  9. Cool 10 minutes and remove from pans.
