Ingredients

  • 4 medium
    yams, peeled and sliced
  • 1/2 tsp
    orange peel, finely shredded
  • 1/2 c
    orange juice
  • 1 Tbsp
    brown sugar
  • 1/4 tsp
    salt
  • 1/4 tsp
    cinnamon
  • 1/8 tsp
    allspice

How to Make Yams For Health

Step-by-Step

  1. In a large skillet, bring 1" of water to a boil; add yams.
  2. Cover and simmer for 20 minutes or until they are tender.
  3. Drain.
  4. In a small bowl, mix orange peel, orange juice, brown sugar, salt, cinnamon and allspice.
  5. Pour over yams in skillet.
  6. Cook and stir until bubbly.
  7. Simmer, uncovered, for 5 minutes, spooning sauce over potatoes occasionally to make a glaze.
