Ingredients

  • CRUST

  • 1 1/2 c
    flour
  • 1/2 c
    powdered sugar
  • 1 1/2 stick
    butter
  • TOPPING

  • 3 c
    diced rhubarb
  • 3
    eggs
  • 1/2 tsp
    salt
  • 1/2 tsp
    soda
  • 1/2 c
    chopped walnuts
  • 1 3/4 c
    sugar - more or less to taste
  • 1 tsp
    vanilla
  • 1/2 c
    flour

How to Make Rhubarb Bars

Step-by-Step

  1. Preheat oven to 350*
  2. Cut the butter into the flour and powdered sugar until crumbs form. Pat into the bottom of a 9x13 pan and up the sides a little.
  3. Bake at 350* for 15 minutes
  4. For topping, thoroughly beat all ingredients EXCEPT rhubarb and nuts.
  5. Fold in rhubarb and nuts.
  6. Pour over baked crust and bake an additional 35 minutes.
