I'm trying to find recipes using Bisquick for a small cooking project for the Ronald McDonald House. This is one from a Bisquick cookbook that I adjusted a fair amount. Picture coming soon, as the cake is in the oven right now!

Ingredients For blueberry coffee cake

  • 3 c
    bisquick
  • 3/4 c
    sugar
  • 1/4 c
    vegetable oil
  • 1 1/2 tsp
    vanilla
  • 2
    eggs
  • 1 c
    sour cream or plain yogurt
  • 1/4 c
    lemon juice
  • 1/2 c
    applesauce
  • 2 c
    blueberries, fresh or frozen

How To Make blueberry coffee cake

    Heat oven to 350. Generously grease and flour bundt cake pan.

    Combine bisquick, sugar, oil, vanilla, eggs, sour cream, lemon juice and applesauce in large bowl. Add blueberries, stirring in gently.

    Pour cake into prepared pan. Bake 50-55 minutes or until inserted toothpick comes out clean. Cool 15 minutes and then remove from pan. Cool completely.

    Once cooled, drizzle with glaze of 1 cup powdered sugar, 4 tsp lemon juice, 1/2 tsp of vanilla OR just dust with powdered sugar.
