How to Make IRON SKILLET PINEAPPLE UPSIDEDOWN CAKE
1Preheat oven to 350. Melt 2/3 cup of butter; Stir in brown sugar.
2Spread in bottom of 12-inch iron skillet or a 13 X 9 X 2 pan. DO NOT GREASE.
3Arrange pineapple slices over sugar mixture; Place a cherry in the center of each.
4Sprinkle with pecans and set aside.
5In large bowl cream sugar and remaining butter; Beat in eggs and vanilla.
6Combine all dry ingredients; Add alternately with the buttermilk, mixing well after each addition.
7Pour carefully over sugar mixture.
8Bake at 350 for 50-60 minutes or until toothpick test says it's done. Immediately invert onto serving platter.
