This is for the Sandwiches, Sammiches and Sammies group ... and I am not very good at impromptu recipe creations, I know that! Y'all might be asking me to leave the group after this! LOL!
I decided to make a little h'ors d'oeuvre, a canape, out of the recipe. Here goes!
I don't have a photo ... I'm running out the door to a double-header softball game, and trying to get this posted before I go. I'll try to get a photo another time.

  • 1
    tube pillsbury french loaf (in refrigerated biscuit section)
  • 3/4 c
    finely diced celery, divided usage
  • 1 c
    low fat mayonnaise (i use the olive oil mayo)
  • 1/3 c
    parmesan cheese
  • 1/4 c
    chopped green scallion
  • 1 pinch
    cayenne pepper
  • 1 pinch
    dill mix seasoning
  • 1 small
    head of broccoli crowns
  • 1/2 lb
    oven roasted turkey breast sliced thick
  • 1/2 lb
    provolone cheese, sliced thick
  • 1 c
    whole-berry cranberry sauce
  • ·
    s & p, to taste

How to Make Broccoli Canapes


  1. Bake the bread loaf, according to package instructions. I use a bread tube, but you can bake it on a baking sheet.
  2. When the bread is cooled, cut into 20 equal slices, on the diagonal, to make a longer/larger cut. Lay out on two baking sheets.
  3. Mix together a half cup of the celery (save the other 1/4 cup for later); mayo; parmesan cheese; scallion; cayenne; and dill mix seasoning. Stir well; set aside for assembly later.
  4. Place the small crown of broccoli in your steamer. Steam it ONLY for a few minutes, just until it reaches a gorgeous, bright, emerald green color. It should still be tender-crisp, but not have a definite hard CRUNCH to it. Don't overcook! It only takes a few minutes, literally!
    After it has steamed for just a few minutes, take it away from the heat and run it under very cold water, to stop the cooking process. Cool it until you can handle it w/ your hands easily.
  5. After the broccoli has cooled sufficiently, slice it VERTICALLY into 1/4" slices ... it will look like slices of a brain. Sorry! :o/ Set aside for assembly later.
  6. On the bread slices, arrange a small piece of the turkey and a small piece of the cheese (You might have to cut and shape it, depending on how your deli slices it. But it should be thick, on a #2, as I tell the deli lady).
  7. Place the canapes under the broiler, just until the cheese is melty and bubbly. Remove from the broiler.
  8. On top of the melted cheese, place one of the broccoli slices, then put a small dollop of cranberry sauce and spread it slightly, then a dollop of the seasoned mayo mixture.
  9. Use the remainder of the finely diced celery to garnish the tops of the mayo mixture (if you don't want to use celery, you could dice some chives).
  10. Place on a pretty platter and serve right away!
