Ingredients

  • 3 lb
    chicken
  • 7 medium
    red potatoes
  • 3 large
    white onions
  • 4 large
    carrots, chopped
  • 1 pkg
    broccoli florets
  • 3/4 c
    white wine vinegar
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    basil, dried
  • 1 c
    chicken broth
  • 1 large
    lemon
  • 1 or 2 Tbsp
    salt and pepper
  • 1/2 c
    olive oil, extra virgin

How to Make Roasted Chicken with Veggies

Step-by-Step

  1. Wash chicken, Cut one onion in half and lemon and stuff into cavity of chicken. Rub chicken down with garlic powder salt pepper and olive oil. Place breast side down in a dutch oven. Heat oven to 350. Cut and peel potatoes, carrots, and remaining onions, add to pan. Add remaining ingrediants. Place lid on pan and bake for about 1.5 hours or until tender and juices run clear...
