How to Make Sweet Potato Marshmallow Croquettes
- Pare,dice and boil the yams to a soft mash.
- Stir in 1 egg,1/4 cup cream,the butter,sugar and cinnamon. Cool.
- Shape the potatoes around the marshmallows.
- Mix the eggs in the remaining cream. Dip the croquettes into cream, then dredge in breadcrumbs.
- Heat the oil to 375.
Fry the croquettes until golden brown. Serve hot.
