Sweet Orange Carrot Salad
I got this recipe several years ago from a co-worker who brought this dish to a pot-luck. Because it was "carrot salad" it went largely untouched. What a wonderfully pleasant surprise when I finally got the gumption to give it a taste!!!
2 Tbsplemon juice
2 Tbspbrown sugar
1 Tbsphoney mustard
1 tspasian dark sesame oil
·salt and pepper
2 Tbspcandied ginger, minced
1 lbpeeled and shredded carrots
2 Tbsptoasted sesame seeds
How to Make Sweet Orange Carrot Salad
- Zest the two oranges and set aside. "Supreme" one of the oranges into sections and toss the orange segments with the shredded carrots, orange zest and minced ginger.
- In a separate bowl, sqeeze the juice from the second orange. Add lemon juice and brown sugar and stir until dissolved.
- In another bowl, mix the mayonnaise, honey mustard and sesame oil. Add salt and pepper to taste. Slowly combine the orange and lemon juice mixture in small amounts at a time, whisking it as it is added. Once combined, toss with the shredded carrots.
- Sprinkle the sesame seeds on top.
- Store in refrigerator.
