While looking for a meatless quiche for Christmas, I located this on the bottom of my recipe 'shoebox'. It's been years but it's still divine... try it yourself.

  • 1/2 c
    finely minced onion
  • 1/2 c
  • 6
  • 2 c
    heavy cream
  • 1 tsp
  • 1/4 tsp
    white pepper
  • 6 oz
    shredded jarlsberg cheese
  • 1
    10" pie shell pre-baked

How to Make Simply Elegant Quiche


  1. Place onions and sherry in a small saucepan. Bring to boil over low heat and simmer for 2 minutes. Remove from heat and set aside to cool.
  2. Beat eggs and cream together very gently. Fold in onion mixture and spices.
  3. Sprinkle cheese over the bottom of the prepared pie shell.
  4. Pour egg mixture into pie crust.
  5. Bake at 360 degrees (yes, 360 not 350) for 35 to 45 minutes or until custard sets.
  6. Let quiche set for 10 minutes before slicing.
