Honey Raisin Waffle Cookies

Oven broken, so I decided to try out the waffle iron method, which I see mentioned quite frequently on Just A Pinch.
They tasted great, but they still look like waffles. I think my husband and daughter will want to eat them for breakfast.
When my oven is fixed, I'll have to try them on cookie sheets.
I used extra virgin olive oil in the recipe; and you don't taste olives!

  • 1/2 c
    olive oil (walnut oil or safflower oil may be used)
  • 1/2 c
  • 2
  • 1 tsp
    vanilla extract
  • 2 1/4 c
    whole wheat flour
  • 1 tsp
  • 1/2 tsp
    baking powder
  • 1/4 tsp
  • 1/4 tsp
  • 1 c
    golden raisins

How to Make Honey Raisin Waffle Cookies


  1. Preheat your waffle iron to a medium setting.
    Cream oil and honey thoroughly. Add the eggs and vanilla; beat until well mixed.
  2. Mix together the flour, nutmeg, baking powder, soda, and salt. Add to the creamed mixture; stir until mixed. Fold in the raisins.
  3. Drop batter by tablespoonsful onto your waffle iron, about 2" apart. Cook for about 3 minutes, more or less, until cooked through.
  4. Using the tines of a fork, lift and remove the cookies to a wire rack for cooling.
    May be dusted with powdered sugar if desired.
  5. The dog said they were excellent. Woof!!!
