When my mother would make this casserole she would always tell us kids it was time to Cha-Cha-Cha so thats what we called it. It has become a tradition for my family now and they love it just like I did when I was a kid!

Ingredients

  • 1 Tbsp
    vegetable oil
  • 1 lb
    ground beef, turkey, or chicken
  • 1 c
    chopped onion
  • 3 clove
    garlic, minced
  • 1 Tbsp
    chili powder
  • 1 tsp
    salt
  • 1 tsp
    ground cumin
  • 1 - 14oz. can(s)
    diced tomatoes with green chiles
  • 1 - 15oz. can(s)
    corn, drained
  • 1 - 16oz. can(s)
    refried beans
  • 1 - 4oz. can(s)
    diced green chiles, drained
  • 2 c
    shredded mexican cheese blend
  • 2 c
    crushed tortilla chips
  • 1/2 c
    sliced green onions (optional)

How to Make Cha-Cha-Cha Casserole

Step-by-Step

  1. Preheat oven to 375 degrees. Spray an 8-inch square baking dish with nonstick cooking spray.
  2. Heat oil in large skillet over medium-high heat. Add meat, onion, garlic, chili powder, salt and cumin; cook, stirring to break up meat. Stir in tomatoes, cook about 10 minutes or until liquid evaporates.
  3. Spoon meat mixture into prepared baking dish, top with corn, beans, and chiles. Sprinkle with cheese and crushed chips. Bake 30 minutes and let stand 5 minutes before serving. Garnish with green onions, if desired.
