I am in love with all things pumpkin. My friends and my husband love when I make this cake. It makes the house smell wonderful and it tastes just as good! I hope you come to love it as much as we have!

Ingredients

  • 2 c
    sugar
  • 3/4 c
    vegetable oil
  • 1 tsp
    vanilla extract
  • 2 c
    canned pumpkin
  • 4
    eggs
  • 2 c
    all purpose flour
  • 1/2 c
    applesauce
  • 3 tsp
    baking powder
  • 2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 2 tsp
    ground cinnamon
  • 1 tsp
    ground cloves
  • 1 1/2 tsp
    nutmeg
  • 1/4 tsp
    ground ginger
  • 1 tsp
    allspice, ground

How to Make Pumpkin Spice Cake

Step-by-Step

  1. Preheat the oven to 350. Grease and flour a 12 X 18 in. pan - I prefer to use a bundt pan and I spray the inside of the pan with Baker's Joy.
  2. In a medium size bowl, sift together: flour, baking powder, baking soda, salt, cinnamon, cloves, nutmeg, allspice, and ginger. Set aside.
  3. In a large bowl, combine sugar and oil.
  4. Blend in vanilla, applesauce, and pumpkin until smooth.
  5. Once blended, beat in each egg - one at a time. Gradually beat in your flour mixture.
  6. Spread batter into the pan. Bake for 30 minutes(12x18pan) - 45/50 minutes (bundt pan) or until a toothpick inserted comes out clean. Allow the cake to cool. Cover with your favorite topping. (We like to use cinnamon and sugar to sprinkle over the top of the cake.)
  7. Also makes 28 muffins - 3/4 full ~ bake for 18-20 minutes. You can substitute the pumpkin with 2 cups of unsweetened apple butter for an apple spice cake.
