Ingredients For lemon cooler cookies

1/2 cbutter, softened

3/4 cpowdered sugar

2 tsplemon extract
-
1 tspvanilla extract

2 cminus 1 tablespoon cake flour

1 Tbspcornstarch
-
1/4 tspbaking powder
-
1/4 tspsalt
-
4 Tbspmilk
-
1 cadditional powdered sugar for dusting
How To Make lemon cooler cookies

1cream butter, powdered sugar, milk, lemon and vanilla

2combine flour, cornstarch, baking powder, and salt add to creamed mixture combine thoroughly.. dough will be firm but slightly sticky

3chill dough for 1 hour or until easily worked with. dough can also be frozen for later use. for a more traditional lemon cooler look shape dough into logs and chill then cut in half length wise then slice 1/4 inch slices. I prefer to roll out the dough and use a cookie cutter.. bake at 350 for 9-12 minutes until sides are set dust with additional powdered sugar
